Aromatic, balance between sweet and salty
Preheat the grill pan and brush with a little oil. Grill chicken over medium-hot fire until slightly charred and warm through, about 1-2 minutes per side. You can also bake the chicken in oven. Preheat oven at 220oC and baked the chicken for 3 minutes. Finish cooking by broiling in the oven until a nice golden brown colour develops, flipping the pieces midway.
Slice the chicken and transfer to a platter brush with half of spring onion oil and sprinkle with fried shallots.
